Merlot & Co. has officially opened its doors to Jaipur with a high-octane launch event on March 19, 2025. Located in the heart of Jaipur, in an aesthetic heritage building on the historic MI Road, and designed by an ace architectural firm with a European touch, the restaurant celebrates the rich culinary heritage of world cuisine.

Merlot & Co. is elevating Jaipur’s dining scene by presenting a diverse tapestry of global gastronomy, refined flavors, and exceptional hospitality. Bringing authentic global flavors to Jaipur, the restaurant has assembled an exceptional team of chefs, each with distinct culinary expertise.

Chef Vikash Kumar, with over 14 years of industry experience and training under Michelin-starred Chef Aldo Zilli, will present his mastery of European and Pan-Indian cuisines, reinterpreting classic dishes with innovative techniques.
